A cluster of rock-cut churches with painted interiors, ten minutes' walk uphill from the village. Steps and low doorways; ages six up, ninety minutes.
Dawn balloon flight
An hour aloft at sunrise over the valleys. Operators generally set a minimum age around six and a height requirement; wind cancels flights often.
Kaymaklı underground city
Eight excavated levels of tunnels, stables and kitchens, cool all year. Crouching required in places — not for anyone who dislikes tight spaces.

Cappadocia means land of beautiful horses, and stables run hour-long walks through the valleys at dawn and dusk. From about age six.
Dawn starts and cave rooms
Balloon days begin at four-thirty, so bedtimes shift. Cave rooms are dark and cool and excellent for napping; quad tours set minimum ages.
