EAT LIKE A LOCAL
Siem Reap feeds a lot of visitors, so the difference between a good meal and a bad one is mostly a matter of walking two streets away from Pub Street.
Psar Chas (Old Market)
The working market at the centre of the old quarter, with a food section behind the produce doing noodle soup and rice plates for a dollar or two. Mornings are the market; afternoons are the souvenir stalls.

Kandal Village
A short run of independent cafes, bakeries and small restaurants a few minutes west of the Old Market, where much of the town's better daytime eating has settled. Good for a real breakfast before a temple afternoon.

The riverside branch of the Khmer restaurant that set the benchmark in Phnom Penh, open 11am to 10:30pm daily. The one meal in town worth spending real money on if you want Cambodian cooking taken seriously.

Num banh chok in the morning
The Khmer breakfast — rice noodles under a green fish-and-lemongrass gravy, piled with raw herbs and banana flower — is sold from handcarts and market corners in the morning. It is the dish worth setting an alarm for; amok is the one to order at dinner.
