PICK YOUR BASE
You can walk Bruges end to end in half an hour, so the choice is really how much day-tripper traffic you want outside the door and what you will pay to be inside the ring canal.
Markt and Burg — inside the postcard
A minute from the Belfry and the boat jetties, which is the point, and also coach parties from mid-morning to late afternoon and the highest rates in the city. The centre empties noticeably once the last day-trip trains have gone.

Sint-Anna and Langerei — the quiet north-east
Ten to fifteen minutes' walk from the Markt: residential streets, the Kruisvest ramparts and their windmills at the edge, far fewer visitors. Suits you if you want to eat where people live and do not mind walking back in the dark.

't Zand and Sint-Salvator — by the station
Five to ten minutes on foot from Brugge railway station and the concert hall, on the western side of the centre. Handy for day trips to Ghent or the coast, and usually cheaper than anything on the Markt.

Practical: the weekend is the expensive part
Rates swing hard between midweek and Friday–Saturday, and the centre books out months ahead in December. Ghent is under half an hour away by train and Brussels about an hour, so basing there and day-tripping in is a real option rather than a compromise.
